Sometimes it’s all the jars and pots of delicious accompaniments that add to the cost of a meal. But then that’s what often makes a delicious meal a wow meal, the down side though if you are in the habit of reading labels you will be surprised how much sugar, salt and preservatives are added to sauces. Making your own not only saves you money because you won’t buy so many bottles but homemade is much better for you and your family. Follow my meal plan and these easy weeknight dinners to avoid those jars of sauce!
Monday – Quick Spaghetti Bolognese
This dish has everything you want in terms of taste, goodness and value. No need for side dishes and accompaniments here unless you want to add more veggies from the freezer or a fresh homemade salad.
Tuesday – Lentil and Cheese Burgers with Coleslaw
If you haven’t made a lentil burger before, give it a go. Homemade coleslaw is delicious and you’ll have enough ingredients to serve with the fish cakes or omelette.
Wednesday – Shredded Chicken Quesadillas with lime salsa and quick guacamole
My families favourite eat by the TV food. It’s great fun to make as well as good fun to eat. All the accompaniments like guacamole and salsa are included in the recipe. Shredded cooked chicken really good value as it looks like you have so much more. If family are extra hungry secook and serve a few homemade potato wedges. Dollop the top of the salsa with sour cream or natural yoghurt if you have some in the fridge to spare.
Thursday – Salmon Fish Cakes with Frozen Mixed Vegetables and Hot Chilli Dressing
I usually cook and mash the potatoes for these fishcakes the night before, it’s just that much handier. Love that this meal is really good value and I’m serving it with a homemade chilli sauce for a bit of extra punch.
Friday – Cheese Omelette
A simple meal for the end of the week. You could have some spinach and perhaps a tin of corn to add extra nutrients. Serve with leftover coleslaw from tuesday night.
